My other wonderful brother Kirk, from Park City, will be coming for Kayley and Scott's wedding. He is bringing my youngest nephew, George. My sister-in-law, Mary and the 2 older boys Jack and Andy are on a ski trip in New Zealand. (I know, rough life!) We will truly miss them but they are officially excused since the trip was planned and paid for long before the engagement announcement.

Granny, Kirk and Me (aren't we stylish) - that sun sure was bright!Today I'm making Kirk's favorite cookies for when he arrives. We have named them "No-Bake Fudgies". It's my Grandma Hansen's recipe. I believe she called them "Missouri Cookies". When Mack was little he renamed them "Cat Poop Cookies". They do resemble little poops when they are lined up on the wax paper! We decided to stick with the more appealing name that Kirk came up with:)
The raisin-less cookies for Mark.
Here's the Recipe- Note: Mark doesn't like raisins (silly guy!)so I always make a few for him before I add them.
No-Bake Fudgies
Ingredients:
1 cube butter - melted
2 cups sugar
milk
3 heaping T. cocoa
peanut butter
vanilla
quick cooking oaks
raisins
coconut
Directions:
Melt 1 cube butter, 2 cups sugar and 3 T. of cocoa. Add 1/2 cup
milk and mix.Cook to good rolling boil and remove immediately.
Add 1/2 cup peanut butter and 1 t. vanilla. Mix well,then add
3 cups quick cooking oats, 1 rounded cup raisins, 1 cup coconut.
Mix and drop spoonfuls on wax paper to set.
My Notes:
I always simmer the raisins in a little water to make
them little more plump. I also add a little extra
peanut butter. We keep our cookies in the refrigerator
in a Tupperware with wax paper between the layers.
Scott walked in the kitchen while I was on the phone and said,"Oh, Boy! You're making Uncle Kirk's No Bake Fudgies!". I went in the bedroom to get a phone number for someone from church and when I came back some were missing.... hmmmmmm. No problem, I doubled the recipe because Mack loves them too. I can't wait to see everybody!!!!
Guess what! Brad, Chase and I are going to be able to come to the reception! I am so excited. I didn't find out that we could come until today. We are so excited. I left a note on Kayley's blog but didn't know if I needed to RSVP that we were coming. Just wanted to let you know! See you Friday!
