June 10, 1994

SCOTT!
It's hard to believe another year has passed!
Today Scott turned 15.

When Scott was little, he was a real "NEAT FREAK". He collected match box cars and kept them perfectly lined up in a row by color. If someone moved one he knew exactly which car it was and the place it belonged in the line up.One of the funniest things he did was the night before his 4th Birthday. Kayley, who was 11 at the time decided to decorate his room after he fell asleep so when he woke up on his birthday he'd be ready to celebrate. She blew up balloons and put them all over his room. She had streamers from one corner of the room to the next. It looked awesome. (of course, Kayley did it)

Later that night before going to bed, Mark and I went up to check on Scott and Hope, our nightly routine. As we walked up the stairs and turned the corner we saw a row of balloons and a pile of streamers in the hallway. Scott had woken up for something and cleaned the whole thing up!

(Today on the other hand, we could have a party in his room and he'd never know it.)
I'm hoping he'll revert back to his Neat Freak days....SOON.

Gluten Free Yumminess

Delightfully light, these chocolate cupcakes rely on egg whites instead of flour and leaveners for texture.
Flourless Chocolate Cupcakes
from Martha Stewart Cupcakes

Ingredients

Makes 22

  • 6 tablespoons (3/4 stick) unsalted butter
  • 8 ounces bittersweet chocolate, coarsely chopped (or 1 1/2 cups semisweet chocolate chips)
  • 6 large eggs, separated, room temperature
  • 1/2 cup sugar
  • Ice cream, for serving (optional)

Directions

  1. Preheat oven to 275 degrees. Line standard muffin tins with paper liners. Melt butter and chocolate in a large heatproof bowl set over (not in) a pan of simmering water. Stir to combine, then remove bowl from heat and let cool slightly. Whisk in egg yolks.
  2. With an electric mixer on medium speed, whisk egg whites until soft peaks form. Gradually add sugar, beating until peaks are stiff and glossy but not dry (do not overbeat). Whisk one quarter of the beaten egg whites into chocolate mixture to lighten; gently fold mixture into remaining whites.
  3. Divide batter evenly among lined cups, filling each three-quarters full. Bake, rotating tins halfway through, until cupcakes are just set in centers, about 25 minutes. Transfer tins to wire racks to cool completely before removing cupcakes (their centers will sink). Cupcakes are best eaten the same day they are baked; keep at room temperature until ready to serve, topped with scoops of ice cream, if desired.

Sunday Dinner

I saw this recipe for Cilantro Chicken on Holly's Blog and couldn't wait to try it.


Cilantro Chicken

2 T lime juice
2 T vegetable oil
1 T honey
4 chicken breasts
1 C finely crushed tortilla chips
16 oz. thick-n-chunky salsa
2 T minced fresh cilantro
1 C shredded Monterey Jack Cheese

Combine lime juice, honey, and oil. Dip chicken in lime juice mixture then coat with crushed chips. Place in ungreased 9 x 13 baking dish. Bake uncovered @ 350 degrees for 45 minutes or until juices run clear. Combine Salsa and Cilantro. Pour over and sprinkle with Cheese, bake for 20 more minutes or until the cheese melts.

I served it with Sour Cream and Guacomole as Holly suggested.
We LOVED it!

Thank You Thursday




Two weeks ago we went on a fun trip to Provo, Utah for BYU Graduation. Kayley and Scott graduated on the 23rd of April and were headed to Dallas the 25th. They are so excited to be on to the next adventure .
It is always so fun to go back to that campus. I wish I could say nothing has changed in _?_ years. We won't say how many. It was a great trip. We got to see my brother Kirk and his family and Mark's sister Barbara and her fun group. We had so little time but managed to visit, reminisce and eat at some of our fave spots. Of course Here, Here and HERE (a new favorite Kayley and Scott discovered)....I'm so craving a cookie right now! You guys that live out there, will you have a frosted sugar cookie, and an oatmeal cranberry cookie and a cakebite of course FOR ME? ...... pleeeeeease

Happy Wishes

Yesterday we had our little family celebration for Marci and Hope's birthday. I kept part of the Candy Bar up from Preston's baby shower. We had the "Cake LADY" make the cake ... per Hope's request :) We were thrilled with how it turned out. Can you believe the detail?! It was DEEEElishous too.


It was a beautiful day so sweet Aunt Hope took the cuties out on the trampoline for some fun.
